There are four stages of a relationship in Starfield:

As far as I can tell, you’re fine to flirt with any companion until you reach one of their relationship missions. Once you finish this and pick the “[Romance]” option, then you’re basically committing entirely to this companion and risk making them angry if you make advances toward another.
As stated above, you must keep your chosen romantic interest by your side for practically the whole game if you want things to go anywhere. It takes about 40 hours of performing actions that meet their approval to finally trigger their unique relationship interest. So, you’re just not going to get the chance to get close enough to another companion to even attempt to romance multiple characters.
Can you have a poly relationship in Starfield?

If you do go through all the trouble of getting married and you start to stray, your significant other will express their displeasure.
