Fish Oil in New World is acquired from fish, which can be found in just about any major river or lake. The river connecting Riverset to Primrose is a great place to look. You can also highlight fish on the in-game map using the search bar.
As for the oil itself, it’s not a guaranteed drop. Salvaging fish will always result in Fish Fillets, but Fish Oil appears less frequently. In other words, if you’re trying to stock up, you’re going to need to do a lot of fishing. If you haven’t already, now would be a great time to craft a fishing pole.

The main use for Fish Oil is in the creation of Cooking Oil, which requires two Fish Oil as well as one Nut. If you like to cook, you’ll be using a lot of it.
