There are many items that you can choose to age using kegs in Stardew Valley. Although sometimes you might just throw in whatever you have in your inventory, there is a big difference between the most and least efficient items.

#1. Hops
#2. Pale Ale
#3. Ancient Fruit
#4. Starfruit

Note that Ancient Fruit has the benefit of aging once per week, while Pale Ale takes considerably less time. You will want to evaluate how much your time and effort means to you. If you would rather spend less time on the process, Ancient Fruit outperforms Pale Ale in this regard.
